3 Cloves of Garlic

1/2 cup red onion

1/3 cup fresh cilantro

1/3 cup fresh parsley

1 can chickpeas

2 tablespoons of flaxseed

1/4 breadcrumbs

1/2 teaspoon cumin

1/2 teaspoon salt[/col1]

For the Tomato Cucumber Salsa:

1 1/2 cups grape tomatos

1/4 red onions

1/4 cilantro

1 tablespoon lime juice

1/2 cucumber

sea salt to taste[/col2]
[col3] For the Lemon-Tahini Dressing:

1 clove garlic

1/4 tahini

1/4 lemon juice

3 tablespoons nutritional yeast

2 tablespoons of olive oil

1 tablespoon of water

salt to taste[/col3]

In a food processor, pulse the garlic, onion, cilantro and parsley until minced. Add the chickpeas and mince until the texture becomes a dough.falafel-recipe-rose-city-style-guide

Transfer the mixture into a large bowl and stir in flaxseed, breadcrumbs, cumin and salt.falafel-recipe-rose-city-style-guide

Shape the mixture into small patties and one at a time roll patties into extra breadcrumbs to stick and place on a baking sheet.falafel-recipe-rose-city-style-guide

Bake for 30 minutes until golden brown, flipping halfway through.

Make the Salsa by combining tomatoes, onions, cucumbers, cilantro and lime juice into food processor until roughly chopped.falafel-recipe-rose-city-style-guidefalafel-recipe-rose-city-style-guide

Arrange lettuce leaves of your choice and place falafel in the centre. Top off with salsa and lemon-tahini dressingfalafel-recipe-rose-city-style-guide
