Oh She Glows Cookbook Recipe: Oil Free Baked Falafel Bites
[col1]For the Falalfel:
3 Cloves of Garlic
1/2 cup red onion
1/3 cup fresh cilantro
1/3 cup fresh parsley
1 can chickpeas
2 tablespoons of flaxseed
1/2 teaspoon cumin
1/2 teaspoon salt[/col1]
For the Tomato Cucumber Salsa:
1 1/2 cups grape tomatos
1/4 red onions
1 tablespoon lime juice
sea salt to taste[/col2]
[col3] For the Lemon-Tahini Dressing:
1 clove garlic
1/4 lemon juice
3 tablespoons nutritional yeast
2 tablespoons of olive oil
1 tablespoon of water
salt to taste[/col3]
Pre-heat the over to 400 degrees
In a food processor, pulse the garlic, onion, cilantro and parsley until minced. Add the chickpeas and mince until the texture becomes a dough.
Transfer the mixture into a large bowl and stir in flaxseed, breadcrumbs, cumin and salt.
Shape the mixture into small patties and one at a time roll patties into extra breadcrumbs to stick and place on a baking sheet.
Bake for 30 minutes until golden brown, flipping halfway through.
Make the Salsa by combining tomatoes, onions, cucumbers, cilantro and lime juice into food processor until roughly chopped.
Arrange lettuce leaves of your choice and place falafel in the centre. Top off with salsa and lemon-tahini dressing
