1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger

1/4 cup brown sugar

- Core, peel and thinly slice the apples

Stir occasionally and cook on medium low heat for 10-15 minutes. When apples are softened remove them from heat and set aside to cool.
Scramble egg yolk with 1 tbsp water (this will be your egg wash).
- Preheat oven to 400 F. Cut puff pastry into rectangles (5×3 in.) and brush with egg wash. Line apples on puff pastry and bake for 10 minutes. After 10 minutes lower the heat to 350 and bake for an additional 15 minutes, until the pastry is a golden brown.
Remove from the oven and transfer to wire rack to cool. Enjoy!
